Ingredients
2 cups Sweet Onions, Sliced
3 lbs Beef Short Ribs
1 tbs Kosher Salt
3 tbs Black Pepper, Ground
3 tbs canola oil
1 tbs Garlic, Thinly Sliced
3/4 cup Beer, Porter or Stout
1/2 cup Beef Stock
1 tbs Tomato Paste
16 oz Pepsi®
1 tbs Balsamic Vinegar
1 tsp Thyme, Chopped
1 1/2 tsp Cinnamon, Ground
1/2 tsp Nutmeg, Ground
2 tbs Coriander, Ground
1 tsp lemon zest
1 tsp vanilla extract
Directions

1. Preheat oven to 350 degrees F.

 

2.Spread sliced onions out on the bottom of a 4 inch deep, 10x10 baking container. Set aside.

 

3. Liberally season short ribs with a mix of 1 Tablespoon of kosher salt and 1 Tablespoon of black pepper.

 

4. In a medium sized sauté pan or pot, over medium-high heat, add canola oil.

 

5. Working in batches, sear short ribs in sauté pan, then transfer to the baking container (on top of the bed of onions). Add sliced garlic to the container.

 

6.Add the beer to the hot sauté pan, then add beef stock, tomato paste, Pepsi®, balsamic vinegar, thyme, cinnamon, nutmeg, coriander, lemon zest, and vanilla extract.

 

7. Bring to a boil and mix well.

 

8. Pour liquid into the baking container over the ribs.

 

9. Cover the container tightly with two layers of foil, and cook in the oven until tender (approximately 3 hours).

 

10.Remove short ribs and set aside.

 

11. Pour the remaining juices from the baking container into a sauce pan, and allow to reduce.

 

12. Add butter and swirl. Season with salt and pepper to taste if necessary. Add lemon juice.

 

13. Spoon sauce over short ribs. Garnish with fresh rosemary if desired.

 

14. Enjoy with an ice cold Pepsi!
